Once harvested, the carefully selected leaves and buds travel only a short distance for processing. Capturing the freshness at the start is key!
On arrival, teas are naturally wilted, with sun and light as well as by gentle shaking and tossing, allowing air to blow through them to ultimately reduce the moisture and soften the leaves.
Expert tea makers at the tea garden, rely on sight and scent to judge the colour and aroma and to pick the perfect moment to stop the wilting process at the exact right time. Finally, they apply heat to seal in the signature flavour.
